Corn salsa/salad
Tafkar requested this, so I'll just post it because it's good, or so people tell me . . .
[warning: I make this shit up as I go along- adjust ratios as you see fit-- these ratios will make about a heaping quart]
3 ears fresh corn, cooked
4 (plum) tomoatoes
handful of basil leaves
1 can black beans
balsamic vinegar
olive oil
salt
pepper
cut the corn off the ears
remove seeds from tomatoes and dice
dice basil
drain black beans and wrinse (I recommend using a strainer)
the rest, add to taste
mix together and serve cold
extra stuff that works with this:
black olives
red wine
red chili powder
garlic
oregano
(etc.)
most spices can enhance this concoction- have fun with it. Naturally, fresh is better. The basic ingredients can be canned/dried, but you lose most of its magic.
