So, since the mono wiped out my ability to tolerate milk (you need to keep ingesting milk products to keep the microbes alive), I rebought the cure. They request I not ingest milky goodness while I'm on. The problem? My staple breakfast food is yogurt and granola. Mind you, live culture yogurt and I recall 3 years ago I went ahead with it anyway, but any suggestions on other options? I loved the granola best because it doesn't give me the carb crash (bagel) and it's not greasy (eggs).
I think I'll call and ask about the yogurt at least.

muffins! you can make them with applesauce or bananas for moistness instead of dairy products.

How about a healthy-type cereal, with soy or rice milk? I really like the Blueberry Morning, Great Grains, Banana Nut Crunch line, but even just your regular granola with some fruit or raisins thrown in would be tasty.

I vote for almond milk, because it blends nicely with the cereal. Soy is pretty good, too, assuming you don't have soy sensitivities.

There's also soy yogurt that you could try and use until you can worship at the Altar of Dairy again. :-)

I actually made this for a dessert, but it's perfect for breakfast. Throw a small handful of nuts (almonds or pistachios are best) into a mini-chopper with a small piece of candied ginger, a couple of dried figs or a small bunch of dried pineapple, and a small handful of dried cranberries. Pulse it until it's all chopped up, then put it in a bowl, add some fresh fruit and a dash of cinnamon and pour almond milk over the whole thing. It tastes amazing, and it gave me no sugar crash issues at all while satisfying my sweet cravings.

Almond milk is REALLY good for certain things; it's excellent in this, and it's also excellent in a martini with a bit of vanilla vodka and fresh mint. Hazelnut milk is equally good for this application.

In terms of just drinking a glass of it, yeah, it's not the best.

Can you not do soy? Silk yogurt has most of the benefits of real yogurt: it has 30% of your calcium RDA and a bunch of live cultures. That and unlike many fake yogurts, Silk is actually pretty damn tasty. 'Specially with granola, which is how I like mine.
Star market has them, as does Whole Foods.

Hmm...what about fruit n'protein? Like...peanut butter on an apple or banana? Or a handful of nuts (almonds, maybe) to accompany some carbs? Not so much of a crash problem that way.

This Diabetic's Breakfast

From: [identity profile] kebbykate.livejournal.com
This is what I eat every morning:
One Trader Joe's Cinnamon Raisin Whole Wheat British Muffin, toasted, spread with peanut butter. (And I drink a glass of skim milk, but since you aren't restricted from juice like I am, just pick your favorite juice.)

I came up with this breakfast on my own and was quite pleased when the dietician okayed it and wrote it into my official meal plan.

Lasts me pretty much all morning and is super-yummy!
